Banana Bread {recipe}
Raise your hand if you're ready for fall! **hand raised high** I can't wait to wear jeans again. Anyways, I love making banana bread. Maybe it's because everyone likes it, even Parker, but nonetheless it's easy and really yummy. For the past year I have tried several different recipes and kind of figured out what I like about each until I came up with this. If I had my way, I would throw in a large handful of chocolate chips in this bad boy but my husband doesn't like it with chocolate. I know, crazy right?!
Ingredients:
- 3 ripened bananas
- 1/3 cup of coconut oil
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg (beaten)
- 1 tsp. vanilla
- 1 tsp. baking soda
- a pinch of salt
- 1.5 cups of all purpose flour
Directions:
Preheat the oven to 350 degrees.
In a bowl, mash the bananas and coconut oil together. Mix in the sugars, beaten egg and vanilla. Sprinkle the baking soda and salt on top and mix in. Then add the flour and mix everything together.
Spray a 4x8 inch pan with cooking spray and pour the banana mix in. Cook in the oven for 50-60 minutes. Allow to cool then dig in!
