Hello hello Crosbie Crew readers my name is Rebekah and I blog over at A Bit of Sunshine about my crazy fun family, crafting, cooking and other bright sunshiny things. It is such an honor to be here today I just adore Summer and her cute little family!
This summer we surprised our boys with a shaved ice maker (this one) and all the extras to have sno cone parties whenever we wanted to. It has been a big hit and has allowed me to have fun making up special syrup flavors with some of our favorite fruits. It's so easy and better than using koolaid (although that works in a pinch too!).
Today I am going to share my recipe for a blueberry lime syrup I highly recommend it!
Here's what you do:
1. First your going to want to make a simple syrup with 2 cups of sugar and 2 cups of water. Add that to a saucepan along with the juice of three limes and after you juice them you can throw a few of them in there too and 2 cups of blueberries, fresh or frozen.
2. Bring it all to a boil until the sugar dissolves and then let it simmer for several minutes until the mixture starts to thicken a bit. Maybe ten or fifteen minutes.
3. Then just remove it from the heat and let it sit for several hours or overnight. I moved mine to a bowl and covered it and just let it marinate on the counter.
4. Then after it's sat and all the flavors have really come together you are going to want to strain out the juice and discard the solids and pour the blueberry syrup into a jar or decanter. The color is so pretty and the real fruit gives it such a delicious flavor!
That's it now your ready for a sno cone party!!! Store the leftover syrup in the fridge for several weeks if it lasts that long. Next I am going to try a ginger peach version the skies the limit!
