Super yummy Black Bean Soup!


This is the BEST black bean soup ever!

Ok, I've never had it before I made it the other night but it is so good.  Just ask my friends!  :)

Original recipe can be found here, my take on it:

Ingredients:
- 4 cans of black beans, drained
- 1 onion, chopped
- 5 slices of bacon, chopped (optional)
- 1.5 tbsp of minced garlic
- 1.5 cups of veggie broth, really any broth will work
- 1 can of Rotel 
- 2 big squirts of ketchup
- A few dashes of Worcestershire sauce
- 1 tbsp of chili powder
- salt and pepper
- cilantro

For garnish:
- sour cream
- green onion
- avocado, sliced
- fresh jalepeno, chopped with no seeds
- fresh lime

Directions:
In a large pot, cook the bacon for about 5-7 minutes then add the onions and cook them until their translucent. Drain the bacon grease. Add the garlic and cook for another minute or so.  Add the broth, ketchup, Worcestershire sauce, Rotel and chili powder.  Stir in the beans and bring to a boil. Season with salt and pepper.  Then I let it slow simmer for an hour while checking it and stirring every so often. About 10 minutes before serving, I chopped up the cilantro and added it in.  (if you don't like cilantro, don't add it)

Then scoop it up and place it in a bowl and top with a little bit of each garnish.  So good!
